Winemaking The average age of the vine, 35 years, is a positive prerequisite for producing a high-quality wine. The grapes are harvested manually and selectively. The destemmed grapes are then macerated and fermented slowly at low temperature to preserve all the flavours. Before being bottled, the young organic wine ages in barriques for 12 - 15 month. Chateau la Dorgonne In the course of the mass production in wine, the vintners in Luberon forgot that they actually had excellent soil and climatic conditions. But in spite of all their efforts they were unable to match the prices of the winegrowing areas which were larger and had less hills. The production of large quantities of inferior wine forced a lot of wineries to quit. Vineyards went to seed, numerous buildings and wine cellars, at one time very beautiful, became almost ruins. Their deep sleep did not end until more and more wine-growing estates were taken over by young, well-educated vintners, many of them from other wine-growing areas, who wanted to set up their own business in the beautiful Luberon countryside. In 1999, the Chateau de la Dorgonne (the Dorgonne is a small stream which flows along the winery) was taken over by Nicolas Parmentier. This consisted of almost 30 hectares of old and untended vines, part of which were diseased and had to be cleared. The newly planted Syrah vines come from the famous Domaine de Trevallon, which has an excellent reputation for its outstanding quality. From the very beginning, Nicolas Parmentier was consistent in practising organic viticulture and banned all chemicals from the vineyards and from the cellar as well. This includes carefully tended vineyards, work done by machines wherever possible without a loss of quality, however when manual labor contributes to an improvement in the quality of the wine, such as for example pruning the vines in the winter, disbudding excess shoots during the growing season, or the grape harvest, then there are 24 employees available to do this work.
