enlarge Domaine du Jas d Esclans, organic wine, Cotes de Provence Cru Classee, 2010, red This Cuvée, made from organically grown grapes, has a soft and fruity taste and a great deal of freshness. Since the wine has only aged in stainless steel, is has absolutely no woody aroma. It is a dark ruby red and has a fruity-spicy Mediterranean nature. Drinking this organic wine provides great, uncomplicated enjoyment. Alcohol content is 13 %. Will drink well now through 2012 at temperatures of between 15 and 17 C degrees. Winemaking The grapes are hand-picked. Since the vineyards of the Domaine are very close to the wine cellar, vinification can begin immediately without any delays, i.e. without the oxidation of the grapes and the juice. The grapes are destemmed and then fermented in must vats. Fermentation takes about 4 to 6 days. After this, the young wine is aged for several months in stainless steel tanks.
