A bright, lively red with purple nuances (when it's young), with a bouquet of wild berries, a distinctive structure, mouth-filling fruit aromas and well-integrated, ripe tannins. Drink now and up to 2015. Decant 1 hour before serving. A tip for gourmets: the young Chianti pairs well with grilled meat, the mature Chianti with game and roasts. Organic Wine Estate CASINA DI CORNIA In 1979, Antoine Luginbühl, a citizen of Switzerland, discovered the small agricultural estate La Casina di Cornia. He fell in love with this place immediately, a place which reflected the quality of a thousand-year-old cultural landscape. He bought the place, moved to Tuscany with his wife in 1980 and started farming the 7 hectares of vineyards in accordance with the guidelines for organic farming. They are surrounded by 17 hectares of farmland and compensation area, which also belongs to Casina di Cornia but which although not used is important from an ecological point of view. After a transition period of 3 years, in accordance with the regulations of the Organic Agriculture Association, Casina di Cornia was officially recognized as an organic winery. In order to improve the quality of his Chianti Classico wines, Antoine Luginbühl has continuously replaced old vines with high grade clones of the Sangiovese vines. As one of the few vintners of organic wines, he has managed to stop using copper compounds to control fungal diseases in the vineyard, and uses only a compound made of sulfur, loam and plant extracts as well as rock dust. The extremely high quality of the organic Tuscan wines produced here at Casina di Cornia is attained by radically reducing the yield and by a completely natural method of winemaking in which the temperature is controlled during maceration and fermentation, but no synthetic yeasts or other aids are used. The young wines are fined using egg whites (organic eggs) and decanted several times but are not filtered. Francine Luginbühl produces pottery which is on display here, and one of the adjoining buildings which was formerly used for agricultural purposes has been renovated and redecorated and now contains lovely apartments for guests.
