enlarge Côteaux d'Aix en Provence, rosé, Domaine Les Béates This organic wine has a light pink, a dominant clear fruity bouquet with a wonderful nuance of wild berry jam. Well-balanced on the palate, with volume and slightly spicy finish. Winemaking The vines grow on sandy soil containing molasse, which brings out the fruity components of this varietal especially well. The winemaking is done partially in accordance with the so-called Saigne method (the grapes are just crushed, and the juice drains off without pressing), and the other part is pressed directly. Fermentation is done at a low temperature in stainless steel tanks. The wine is filtered and bottled soon after. Domaine Les Béates This winery has retained its name, which originated in the 17th century, in spite of all the changes of ownership it has undergone. According to history, it was established by nuns who called themselves Les Béates (the Blessed) and who settled in the remote villages of the Provence at that time, mainly in order to teach children how to read and write. Bernard Terrat was the president of a large industrial company until he fell under the spell of the location and the excellent conditions for viticulture which the Domaine Les Béates offered and bought it. In 1996, he merged with the Chapoutiers, a family famous for their viticulture, who had introduced biodynamic viticulture to this area and had built a new wine cellar. In 2000, he bought 28 hectares of vineyards, thus doubling the wine-growing area. In 2002, the next step was taken, and the shares held by the Chapoutier family became the property of Pierre-Francois Terrat (his son), who joined the company with the goal of making the Domaine Les Béates into one of the best wine estates in the area.
