Winemaking When the grapes are fully ripe, they are hand-picked, destemmed and allowed to ferment for 15 to 21 days at temperatures of between 25 and 35 degrees. Domaine Les Beates This winery has retained its name, which originated in the 17th century, in spite of all the changes of ownership it has undergone. According to history, it was established by nuns who called themselves Les Béates (the Blessed) and who settled in the remote villages of the Provence at that time, mainly in order to teach children how to read and write. Bernard Terrat was the president of a large industrial company until he fell under the spell of the location and the excellent conditions for viticulture which the Domaine Les Béates offered and bought it. In 1996, he merged with the Chapoutiers, a family famous for their viticulture, who had introduced biodynamic viticulture to this area and had built a new wine cellar. In 2000, he bought 28 hectares of vineyards, thus doubling the wine-growing area.
