enlarge Côtes du Luberon, 2009, organic rosé, Château La Canorgue This organic rosé, produced by Chateau la Canorgue, is one of the best in southern France. It has received countless awards and medals, which show that the none of the work done at Canorgue is left to chance. This is a delicate pink, powerful, fruity organic rosé with complex aromas, very well-balanced and dry. Will drink well now and until 2 years after production. Winemaking The grapes are hand-picked, there is a short period of fermentation for the must so that the coloring agents can be leached from the grape skins, and after this the pressing is carried out with a pneumatic press. The juice is then allowed to ferment for 12 days in the grapes’ own yeasts without any selected yeasts. A malolactic fermentation (also called lactic acid fermentation or biological malolactic fermentation) does not occur. After this, the wine ages for some months in a CO2 atmosphere in stainless steel so that it will have as little exposure as possible to the air. This keeps the sulphurization of the wines to an absolute minimum. The bottling is done in February or March without any previous filtration. Chateau la Canorgue With a great deal of diligence and idealism, Jean Pierre and Martine Margan have turned a dilapidated old building, which didn’t have a wine cellar, and neglected vineyards into an exemplary wine estate. Whereas the neighboring wine-growers use a lot of fertilizers and chemicals in order to harvest 60 to 70 hl per hectare, at the Chateau la Canorgue they are satisfied with about 30 to 35 hl. It is no secret that small harvests have a positive effect on the quality of the wine. Thus it is not surprising that the Margans were named wine-growers of the year relatively quickly by the Gault-Millau. They have won so many prizes that it is almost impossible to count them, for example gold medals in Macon, Paris, Avignon, the Coupe de Coeur in the Guide Hachette.
